Recipes: October Cooking

So happy for cooler weather cooking….here’s what’s catching my eye lately:

Apple Conserve–looks like a great holiday gift, and I already have a bunch of apples.

This recipe for Maple Cherry Chipotle BBQ Sauce…Going to use some cherry jam I canned back in June.

Spinach Artichoke Pasta….someone made the dip into an entire meal?!  

This Beef Rendang is one of my all time favorites–but I skip the stovetop and cook it in the slow cooker.

Lastly, I’m really needing to get more into Freezer Cooking.  Here’s Frozen Pizza at home.  I need meals that require little prep.  I’m also hoping to pressure can some chili con carne and soups (TBD) in the coming weeks.  I think next summer I’ll do this during June/July before tomato insanity starts so it’ll be all ready to go come fall.  And I’m desperate for some individually frozen cookie dough balls for the freezer too, and premixed cake/brownie mixes to keep on hand for when the need for dessert strikes.  Guess I have a busy few weeks ahead of me!
